Biosynthesis of Aromatic Spice Compounds

Aromatic compounds make up a large part of spices and are traditionally produced by chemical synthesis and plant extraction. Chemical synthesis depends on petroleum resources and has disadvantages such as an unfriendly environment and harsh reaction conditions. Plant extraction methods are limited by plant resources and occupy arable land. In recent years, with the development of metabolic engineering and synthetic biology technology, microbial synthesis of aromatic spices compounds using renewable raw materials has become a new production method.

Our platform

The chemical synthesis of aromatic fragrance compounds is mainly based on petroleum-based benzene, toluene, and xylene as raw materials. Chemical synthesis has many disadvantages, such as environmental unfriendliness and complex reaction conditions. However, the content of aromatic compounds from plant sources is low, the distillation/extraction process is costly, and their production is limited by plant resources and occupies arable land.

In this context, we offer white biotechnology for synthesizing natural flavors and fragrances using microorganisms as a highly economical and alternative production method to traditional plant-derived and petroleum-based aromatic flavor compounds. We use the growth and metabolic activities of microorganisms to produce various natural flavors. For example, we have used bacteria, molds, and yeasts to produce fragrances such as vanillin and lactones.

Currently, we have made great progress in synthesizing natural aromatic fragrance compounds using the microbial transformation methods using glucose as raw material at present. We have achieved many important research results, from pathway elucidation, and synthetic pathway creation to metabolic regulation, and some of them are already in the stage of industrialization and implementation.
