Determination of Anthocyanidins

Anthocyanidins are the general name of a large class of polyphenols widely found in plants. There are more than 300 different anthocyanins in nature, derived from different fruits and vegetables.

Anthocyanins found in plants have a wide range of uses. Blue, red and purple pigments extracted from flowers, fruits, and vegetables are often used as dyes and food pigments. In addition to being used as a natural colorant, some anthocyanin-rich flowers and fruits are also used in traditional medicine to treat various diseases.
