Organic acids are compounds that contain carboxyl groups in their molecular structure. It is widely distributed in the leaves, roots, especially fruits of plants. Common organic acids include aliphatic and aromatic organic acids. Except for a few organic acids existing in a free state, organic acids are generally combined with potassium, sodium, and calcium to form salts, and some of them are combined with alkaloids to form salts.
