Fatty acids are a class of aliphatic carboxylic acid compounds containing long-chain hydrocarbons, usually in the form of esters in various lipid fractions such as neutral fats, phospholipids, and glycolipids. Fatty acids can be classified into short-chain fatty acids, medium-chain fatty acids, and long-chain fatty acids according to the length of their carbon chains. According to the number of double bonds, they can be divided into saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids. Unsaturated fatty acids can be classified into cis fatty acids and trans fatty acids according to the groups on both sides of the double bond.   • Titration method. The more commonly used traditional titration method, and the method is simple and easy to perform, does not require special instruments and reagents.
  • ELISA. The results are determined by measuring the absorbance (OD value) at 450 nm wavelength with an enzyme marker, which gives the sample concentration.
  • GC. the complex mixture will be separated, the analysis is fast, the separation efficiency is higher than other analytical instruments, and the selectivity is better.
  • HPLC. This method is suitable for lipids with a high boiling point, large molecules, strong polarity, and poor thermal stability.
  • GC-MS. GC-MS can effectively eliminate the tedious steps such as cooling during the analysis, which not only reduces the analysis time but also reduces the consumption of items.
  • HPLC-ELSD. HPLC-ELSD can directly detect fatty acids and their derivatives, which can avoid the problems of side reactions and incomplete reactions in the derivatization process of GC or GC-MS methods. Meanwhile, gradient elution can be used, and the baseline can be maintained smoothly and with high sensitivity when evaporating light to detect the substances, and the analysis time is short.
