Studies have reported that moderate coffee consumption can prevent atherosclerosis and reduce the risk of rectal cancer and colon cancer, among other functions. Coffee contains various antioxidant components, including chlorogenic acid, caffeine, caffeic acid, and other alcohols and flavonoids, which can positively affect the human body when consumed in moderation.

Hyperspectral imaging (HSI)

We provide Hyperspectral imaging (HSI) technology, which combines traditional spectroscopic and imaging techniques in a high-resolution, non-destructive, and fast way. Samples and offers the possibility to scan samples at high throughput while visualizing the spatial distribution. Currently, we offer HSI technology for the non-destructive analysis of coffee beans and other legumes, as well as grains.

Electron spin resonance (ESR) spectroscopy

Caffeine, in response to the accumulation of free radicals, causes the oxidation of blood vessel walls, protein molecules, DNA, carbohydrates, and membrane lipids. The damage caused by free radical accumulation can affect cell function and the ability to replicate, leading to premature aging and various diseases. This hydroxyl radical-induced damage is known as oxidative stress. Consumption of foods rich in natural antioxidants can be used to reduce oxidative stress.

Coffee is popular as an excellent source of antioxidants. However, different antioxidant activity in coffee can arise between different types of coffee and different coffee roasting methods. We use ESR spectroscopy to measure coffee beans directly to analyze the number of free radicals in coffee and indirectly for analyzing antioxidant activity. So far, we have used the ESR method to determine various free radical scavenging activities in instant coffee extracts. We have found that more expensive instant coffee has greater antioxidant potential than cheaper coffee and that higher quality coffee beans provide higher antioxidant and radical scavenging capacity.
