For example, we use bacteria, molds, and yeasts to convert compounds such as eugenol, isoeugenol, ferulic acid, and glucose into vanillin. The enzyme-catalyzed reactions we provide are highly efficient, specific, mild reaction conditions, easy to purify products, low energy consumption, low pollution, and simple and easy to control operation in producing natural flavors, so the enzyme engineering-related technologies we provide are widely used in natural spices.
