Detection Principle The pH-differential method is used to determine the content of anthocyanin, when the pH is 1.0, anthocyanin has the maximum absorption peak at 530 nm, and when the pH is 4.5, anthocyanin is transformed into a colorless chalcone form, and there is no absorption peak at 530 nm, so we can use this characteristic to determine the absorbance values at 530 nm and 700 nm under different pH. pH-differential method reduces the effects of the difference of the pH of solution and the solvent, and excludes other non-anthocyanin substances. The pH-differential method reduces the influence of solution pH and solvent differences, and excludes the interference of other non-anthocyanidin substances on the results.
